Pure anhydrous acetic acid (glacial acetic acid) is a colorless hygroscopic liquid with a freezing point of 16.6 ℃ (62 ℉). It is a colorless crystal after solidification. Its aqueous solution is weakly acidic and highly corrosive. It is highly corrosive to metals. Its vapor is irritating to the eyes and nose.

Acetic acid is widely distributed in nature, for example, in fruits or vegetable oils, acetic acid mainly exists in the form of esters. Acetic acid exists in the form of free acid in animal tissues, excreta and blood. Many microorganisms can convert different organic substances into acetic acid through fermentation.

1.Industrial use

1.1 Acetic acid is a staple chemical product and one of the most important organic acids. Mainly used in the production of acetic anhydride, acetate and cellulose acetate, and so on. Polyvinyl acetate can be made into films and adhesives, and is also the raw material of synthetic fiber vinylon. Cellulose acetate is used to make rayon and motion picture film.

1.2 Acetates formed from lower alcohols are excellent solvents and are widely used in the paint industry. Because acetic acid dissolves most organics, it is also a common organic solvent (e.g., for the oxidation of p-xylene to terephthalic acid).

1.3 Acetic acid can be used in some pickling and polishing solutions, as a buffer in weak acid solutions (such as zinc plating and electroless nickel plating), as an additive in semi-bright nickel plating electrolyte, and as a passivating agent in zinc and cadmium passivation solutions to improve the binding force of the passivation film, and is often used to adjust the pH of weak acid plating solutions.

1.4 It is used in the production of acetate, such as manganese, sodium, lead, aluminum, zinc, cobalt and other metal salts, which are widely used as catalysts, auxiliaries in textile dyeing and leather tanning industries; lead acetate is the paint color of lead white; lead tetraacetate is an organic synthetic reagent (for example, lead tetraacetate can be used as a strong oxidant, provide the source of acetoxy and prepare organic lead compounds).

1.5 Acetic acid is also used as an analytical reagent, in organic synthesis, and in the synthesis of pigments and drugs.

 

2. Food use

In the food industry, acetic acid is used as an acidulant, a flavoring agent and a spice, and when the synthetic vinegar is manufactured, the acetic acid is diluted to 4-5% by water, and various flavoring agents are added, so that the flavor is similar to that of the alcohol vinegar, the manufacturing time is short, and the price is low. It can be used as souring agent, compound seasoning, vinegar, canned food, jelly and cheese. It can be used according to the production needs. It can also be used as a flavoring agent for koji-flavor liquor at a dosage of 0.1 to 0.3 G/kg.
